
Cherry Chocolate Muffins

I made these “knock-your-socks-off” muffins for our Sunday morning Hostess Committee at church back in early February. WOW, were they ever a hit. I mean, NO ONE could stay out of them. I made a lot of them and almost everyone wanted two or three of them! No kidding. š I kept getting comments about how they enjoyed cherries with chocolate. Plus, the muffins seemed to melt in everyone’s mouth! These were probably one of the most enjoyed recipes I’ve made for our church’s ushers and greeters. They literally couldn’t keep out of them.
I’ve made so many versions of this amazing muffin recipe: Chocolate Chip, Strawberry, Blueberry, Toffee, Butterscotch, Cinnamon, Mint Chocolate Fudge, along with a couple of cherry. They ALWAYS turn out so scrumptious that everyone wants seconds! The applesauce and bananas keep the muffins moist, while the additional fruit or chips provide texture and flavor. All in all, the recipe is one of the best finds from last year.
On top of that, they really aren’t difficult to whip up. I make them in miniature sized as well as regular-sized muffin pans. Most of the time the miniature muffins take between 8-10 minutes and the regular sized muffins take 18 minutes at 400 degrees. You can add paper liners if you choose, but I usually make them without the liners.
Regardless, Cherry Chocolate Muffins along with all the others, were gobbled up in no time. Don’t plan on any leftovers with this favorite recipe.

Cherry Chocolate Muffins will knock your socks off!

These muffins are chocked full of miniature chocolate chips and candied cherries.

You’ll be salivating over every delicious bite. š

I made miniature-sized muffins, but you can bake these in regular-sized muffin baking pans too.
Here’s what I did.

I used these ingredients.

Mash bananas on a plate with a fork; set aside.

Chop candied cherries on a cutting board; set aside.

In a large mixing bowl, pour unbleached all-purpose flour. (Bleached flour toughens baked goods). Add granulated sugar, baking powder and salt.

Stir ingredients well to combine; set aside.

In a separate bowl, combine applesauce, mashed bananas, an egg and oil.

Add half-and-half.

Whisk ingredients well to combine.

Add wet ingredients to dry ingredients.

Add miniature chocolate chips and chopped candied cherries.

Stir just to combine. Do not overmix the batter.

Spray miniature muffin tins with cooking spray. Spoon muffin batter into tins to the top.

Bake at 400 degrees for about 10 minutes.

Cool muffins in tins for about 5-10 minutes before removing to wire racks to cool completely. Transfer to serving platters.

CHERRY CHOCOLATE MUFFINS
(Recipe inspired from my Banana Chip Muffins)

Cherry Chocolate Muffins
Equipment
- 46 miniature muffin tins 2 or 3 pans, depending on how many muffins are in each pan
- 1 large mixing bowl
- 1 wooden spoon
- 1 medium mixing bowl
- 1 whisk
- 1 sharp knife
- 1 cutting board
- 1 plate
- 1 fork
- 2 wire cooling racks
- measuring cups
- measuring spoons
Ingredients
- 1 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. sea salt
- 1 large egg
- 1/2 cup half-and-half
- 1/3 cup canola oil or avocado oil
- 1 cup bananas mashed
- 1/2 cup unsweetened applesauce
- 1 cup miniature chocolate chips
- 1 cup candied cherries chopped (measure after chopping)
Instructions
- REGULAR SIZED MUFFINS: (See note below for miniature muffins).
- Spray 16-18 regular-sized muffin tins with cooking spray; set aside.
- Preheat oven to 400°.
- Mash bananas on a plate with a fork; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder and salt.
- Set aside.
- In a medium mixing bowl, combine egg, half-and-half, oil, banana and applesauce.
- Whisk until well combined and the banana is broken up into very tiny pieces.
- Add wet ingredients to dry ingredients along with chocolate chips and cherries.
- Stir just to combine.
- Do not overmix the batter.
- Spoon batter into prepared muffin tins until full.
- Bake at 400° for about 18 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 5 minutes before removing to a wire rack to cool completely.
- Yield: 16-18 regular-sized muffins.

We loved every bite of these muffins.

When I measured all of my miniature muffin tins, I realized they were not all the same size. These ones were 1 1/2-inches, some of my other muffin tins were 2 1/2-inch muffins.
