
Rib Eyes with Mushrooms

I love a good steak, and probably eat more of it than I should! But steaks with mushrooms are my absolute favorite. My husband grills all the time for our family. I stock up on meat or fish and fill our freezers during the year. Then I pull out meat for whenever I want it. Steaks and Grilled Chicken are what we end up making the most. It’s so versatile, I can serve it with just about any side and be in my happy place. 🙂

This marinated steak recipe starts with beef broth. I added green onions, garlic, balsamic vinegar, thyme along with salt and pepper. Part of the marinade is used to coat the steaks and the remaining is heated up with the mushrooms and added to serve over top of the steaks when you actually grill them.
When I made this steak dinner, I added Corn-on-the-Cob with Cilantro-Lime Butter, grilled plums and a Cheese Potato Puff. It was one fantastic meal and even the leftovers were good! I rarely buy rib-eyes, usually just purchasing NY Strip Steaks. But I wanted them for this particular recipe.
Rib Eyes with Mushrooms turned out better than I expected. These steaks are great for company dinners, backyard barbecues and certainly when grilling out with friends. The thyme and balsamic vinegar add just the right flavors and seasonings and the mushrooms add a little more zest to the recipe. We loved steaks made this way and hope you will too.

I served the steaks with Corn-on-the-Cob with Cilantro-Lime Butter. Yum.

I get tired of preparing steaks the same way each time, so I’m always looking for new recipes to try out. The steaks were particularly good served with Corn-on-the-Cob with Cilantro-Lime Butter, Cheese Potato Puff and Grilled Plums.
Here’s what I did.

I used these ingredients.

In a mixing bowl, combine onions and garlic.

Add thyme, salt and pepper.

Add beef broth and balsamic vinegar.

Stir well to combine.

Place steaks in a large zip-lock bag.

Add half of the marinade to the steaks, refrigerate at least two hours. Cover remaining marinade and refrigerate.

Remove steaks from bag and drain marinade. Place steaks on hot grill.

Grill steaks 5-6 minutes on each side, until they reach desired level of doneness.

Meanwhile, pour remaining half of the marinade into a medium-sized sauce pan and bring to a boil. Cook and stir, one minute.

Add mushrooms and cook an additional 5 minutes.

Serve mushroom sauce over top of steaks after they’re grilled.

Place grilled steaks over serving platter. Spread mushroom sauce over top and serve.

These juicy rib eyes are flavored wonderfully with the balsamic vinegar and thyme.

RIB EYES WITH MUSHROOMS

Rib Eyes with Mushrooms
Equipment
- 1 gas grill or electric or charcoal grill
- 1 large plastic zip-lock bag
- 1 large mixing bowl
- 1 sharp knife
- 1 cutting board
- measuring cups
- measuring spoons
- 1 small bowl or measuring cup to store half of the marinade
- 1 medium sauce pan
Ingredients
- 16 green onions sliced
- 4 large garlic cloves finely minced
- 2 cups beef broth
- 1/4 cup balsamic vinegar
- 1 tsp. dried thyme (plus more to sprinkle over the steaks while grilling, if desired)
- 1/2 tsp. ground black pepper
- 4 beef rib eye steaks (about 8-ounces each)
- 2 cups fresh mushrooms sliced
- additional salt and pepper as needed
Instructions
- In a medium mixing bowl, combine onions, garlic, beef broth, vinegar, thyme and black pepper.
- Place steaks in a large zip-lock bag.
- Add half of the marinade.
- Seal bag and turn over several times to coat the steaks with the marinade.
- Refrigerate for 2 hours.
- Cover and refrigerate remaining marinade.
- Drain and discard marinade from the steaks.
- Grill steaks for 5-6 minutes on each side, or until meat reaches desired doneness (145° for medium rare, 160° for medium, 170°for well-done.)
- Meanwhile, place remaining marinade in a small saucepan and bring to a boil over medium heat.
- Cook and stir for one minute.
- Add mushrooms and cook until tender – about 5 minutes.
- Serve over steaks.Â
