Chocolate Ooey Gooey Bars. Let that sink in. š These delicious Ooey Gooey Bars feature not only chocolate chips, but a chocolate cheesecake batter as well. They are absolutely outstanding and a fantastic dessert to make anytime of the day or year. They’re especially good for holidays, or serve them at tailgating parties, potlucks, or Backyard Barbecues. But whatever you do, just serve them!

I found this recipe in my FaceBook feed one evening when I was looking through it. I decided that I would have to dig out the recipe and make these delicious treats. I am so glad I did. I served them for our church’s youth group meeting one Wednesday night earlier this year. I had so many people come up to me afterwards and rave over these Chocolate Ooey Gooey Bars. Yes, these brownies are seriously drool-worthy. No kidding.
For those of you who have never made Ooey Gooey Bars before, this is a layered dessert. The crust is made with a chocolate cake mix (I used Devil’s Food), an egg and melted butter. The cheesecake layer includes cream cheese, powdered sugar, eggs, vanilla and cocoa. The top layer is miniature chocolate chips. It’s a spectacular dessert anyway, but if you’re a chocolate lover, this chocolaty dessert will rock your world! Enjoy every bite. š

The chocolaty cheesecake filling in the middle is spectacular.

These luscious bars have triple the chocolate flavor. Yum.

You’ll be swooning over every mouthful!
Here’s what I did.

I used these ingredients for the crust layer.

Melt butter in a large mixing bowl in the microwave.

Add chocolate cake mix and eggs.

Stir very well until mixture is very well combined.

Spread mixture into a greased 9×13″ baking dish or pan. (This is a double batch in an 18-26″ baking sheet pan).

Press and stretch ingredients until the chocolate crust fills the pan; set aside.

I used these ingredients for the cheesecake layer and the topping.

Soften butter and cream cheese. (You can also melt the butter. See notes in recipe card below). Place in a large mixing bowl with eggs and vanilla.

Beat with an electric mixer until smooth.

Add cocoa and powdered sugar.

Beat again with an electric mixer until smooth.

Spread mixture over top of the crust layer.

Spread cheesecake mixture to the very edges of the pan and smooth the top. (This is a double batch in an 18×26″ baking pan).

Sprinkle miniature chocolate chips over top.

Bake at 350 degrees about 40-45 minutes. Allow dessert to cool in pan 30 minutes before refrigerating. Cool about an hour or two in the refrigerator before cutting into bars. Refrigerate again until ready to serve.

CHOCOLATE OOEY GOOEY BARS

Chocolate Ooey Gooey Bars
Equipment
- 1 9×13" glass baking dish
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 wire cooling rack
Ingredients
CRUST:
- 1 chocolate cake mix (I used Devil's Food)
- 1 large egg
- 1/2 cup salted butter melted (1 stick)
CHEESECAKE LAYER:
- 8 oz. block cream cheese softened
- 2 large eggs
- 1 tsp. pure vanilla extract
- 1/2 cup salted butter softened, or melted and cooled (1 stick)
- 16 oz. powdered sugar
- 1/4 cup cocoa
TOPPING:
- 1 cup miniature chocolate chips if desired
Instructions
CRUST:
- Preheat oven to 350°.
- Spray a 9×13ā glass baking dish with cooking spray.
- Set aside.
- In a medium mixing bowl, combine chocolate cake mix, egg and melted butter.
- Spread mixture into the bottom of the prepared baking dish.Ā
CHEESECAKE:
- In a separate medium mixing bowl, beat the cream cheese, butter, eggs and vanilla extract with an electric mixer until smooth.
- Gradually beat in the powdered sugar and cocoa until mixture is smooth and creamy.
- Spread Filling over top of crust layer.Ā
TOPPING:
- Sprinkle miniature chocolate chips over top.
- Bake at 350° for 45-50 minutes.
- Allow to cool 30 minutes in pan before refrigerating.
- Refrigerate about one to two hours.
- Cut into bars and refrigerate until ready to serve.
